Beef Gyros (Slow Cooker or Instant Pot)
Greek-style seasoned beef with fresh salad and cool tzatziki, with pressure-cooker and slow-cooker methods.

Stir all the tzatziki ingredients together thoroughly and refrigerate until serving.
Trim large fat deposits from the roast, cut the beef into thin 1/4-inch strips and arrange them in the slow cooker.
Blend the olive oil, garlic powder, oregano, cumin, thyme, lemon juice, salt and pepper. Pour this mixture over the beef, cover and leave on LOW; after 6 hours, check that the meat is tender.
Line each pita with lettuce, then add beef, tomatoes, cucumber, onion and tzatziki.
Trim away large pieces of fat, slice the roast into thin 1/4-inch strips and put them in the Instant Pot.
Mix 1/3 cup WATER with the olive oil, garlic powder, oregano, cumin, thyme, lemon juice, salt and pepper, then pour it over the beef.
Lock the lid, set the valve to sealing and cook on manual or high pressure for 30 minutes.
When the timer sounds, leave the cooker untouched for 15 minutes before venting the remaining pressure. Open, taste and correct the seasoning.
Fill lettuce-lined pitas with the beef, tomatoes, cucumber, onion and tzatziki.
Notes
The tzatziki can be made ahead and kept chilled while the beef cooks.
